So I'm at a comp in Lawrence last fall and this old judge leans over and just says "flat" about my brisket. I'm standing there wondering if my packer was too thin on the flat side. Spent the next two cooks trimming differently and wrapping earlier, zero change. Third try I finally asked him to explain and he meant the taste fell off after the first bite, no finish on the back end. Started adding a little more coarse black pepper and letting the rub sit 30 min longer before it hit the smoker, and my scores went from 6s to 8s in taste. Anybody else get torn apart by a one word comment that meant the total opposite of what you assumed?
