That fancy ceramic smoker I laughed at... now I get it
My old neighbor Bob swore by his green egg for years and I always told him it was just an overpriced flower pot. Then last summer he invited me over for a brisket that had this perfect bark and the juiciest meat I ever ate. He showed me how it held 225 degrees for 12 hours without him touching it once, which my offset smoker can't do without constant babysitting. I ended up picking up a used one on Facebook marketplace for $300 and I have to admit, it changed my whole setup. Has anyone else made the switch from stick burners to ceramic and regretted it or are you all converts like me now?

Yeah @ryang65 give it a couple months, mine finally clicked after I stopped overthinking and just used it regular.
