Pro tip: I switched from a standard boning knife to a curved one for breaking down pork shoulders.

The curve let me follow the bone contour way easier, and I saved about 15 minutes on a 60-pound batch. Anyone have a favorite blade shape for primal cuts?

Man, that breaking knife vs boning knife thing trips so many people up. I made the same mistake when I first started doing bigger cuts of meat. But yeah, that curved breaking knife is an absolute lifesaver on pork shoulders, especially when you're doing volume like 60 pounds. It just glides right along that bone without fighting you.

Oh that's interesting... but I think you might mean a breaking knife, not a boning knife. A boning knife is that thin, flexible one for getting close to ribs and poultry. A breaking knife is the big, curved one for shoulders and primals. The curve is a game changer though, totally get that. Makes those big cuts around the hip socket so much smoother.
