Showerthought: my 40 year old breaking knife snapped on a ham bone and I felt like I lost a hand
I was breaking down a whole Berkshire hog at my place in Boise two Saturdays back and my old carbon steel breaking knife just gave out on me. The tip caught a knuckle of the femur and the blade snapped clean about an inch from the handle. I stood there holding half a knife like an idiot for a solid minute. That knife came from a shop that closed down 15 years ago and I have never found another one I like the feel of. I finished the hog with a stiff boning knife and it worked fine but it was not the same. So now I am hunting for a replacement and everything new feels too light and too shiny. Anybody out there still running old carbon steel and where do you even find it now?
