Warning: buying whole hogs at auction is not the money saver people claim
Last month a guy at the Sioux Falls stockyard told me I was throwing money away by not buying live hogs and breaking them down myself. So I bought a 260 lb hog for $185 and figured I would beat my usual $2.40 a lb wholesale price easy. Between the kill fee, the cooler space I gave up for four days, and the 30 percent I lost to trim and bone, my real cost came out to almost $3.10 a lb. The math only works if you have steady help and a walk in you are not already maxing out. Anyone here actually making live buying pay off, or did you go back to hanging weight from your regular guy?
Tbh this is the same trap as people thinking they save money growing their own veggies or fixing their own car, the hidden costs always eat the savings. Your time and space are worth something too and most folks just forget to count that part.
