Can we talk about how a sheet pan of ice saved my hollandaise last service?
We had a huge wedding party order and my sauce started to break right as the first plates went out. I grabbed a half sheet pan from the freezer, set the bowl on it for maybe 90 seconds, and whisked like crazy. Do you have a better fix for a broken emulsion when you're in the weeds?
