Can we talk about the 22 year old line cook who told me my sauce was flat?
He said it right in the middle of a Friday rush at the place I ran in Kansas City, just loud enough for the grill guy to hear. I wanted to fire him on the spot but he was right, I had been skipping the sherry vinegar for weeks to save time. Anybody else get humbled by someone half their age on the line?
Man, that kid did you a favor and he probably doesn't even know it. Here's the thing nobody talks about: the sherry vinegar thing is never just the sherry vinegar. When you start cutting one corner to save time, you start cutting five. I've watched it happen in my own kitchen, skipped the fresh garlic one week, then it was the shallots, next thing you know the whole board is reaching for the jar stuff. So the real question isn't whether you got humbled. It's whether you fixed the one thing or actually walked back and checked what else you'd been letting slide. That's the part that scares me more than a 22 year old with a good palate.
