DAE still French their omelets or did you all switch to the diner fold

I used to spend 10 minutes getting that perfect pale rolled French omelet for brunch service, but now I just do the quick diner fold and nobody has sent one back in 8 months. Am I losing something by skipping the fuss, or did we all quietly decide the taste is the same?
