Do we overcomplicate brines or is precision the whole point?
I worked a station last month where a guy insisted on weighing every single salt gram and timing each brine to the minute, and honestly his chicken came out perfect. But my first mentor in Detroit just eyeballed a handful of salt and lemon juice and his stuff was always juicy too. I noticed rookies reading week-long multicomponent brine recipes online and then burning out, while the old hands keep it to salt, sugar, and water. Is the science really giving us something better, or are we just hiding behind numbers to feel professional? Who's had a blind taste test that actually proved the fussy method wins?
Ever think the fussy guy's chicken was just better because he was paying close attention the whole time, not because of the gram scale?
