Wrote off cooking with gas for 6 years, then a power outage in Buffalo changed my mind
I ran everything on induction since 2018 and would argue with anybody who said gas was better. Then last winter a storm knocked our power out for 4 days in Buffalo and a neighbor let me use his gas range to keep feeding my family. The thing I noticed right away was how fast I could drop the heat on a pan, no waiting for a coil to cool down, just turn the knob and it's done. Now I'm shopping for a place with a gas line and my old induction burner is sitting in the garage. Anybody else switch teams after years of being stubborn about it?
Oh, I have to push back on one thing here. The fast heat drop you loved on that gas range is actually the flame itself cutting out, not the pan cooling down, because the metal holds heat just as long either way. With induction, the pan also stops getting energy the second you kill the power, but the pan stays hot for a while, same as it would on gas. So what you felt was likely just the open flame being easier to see and control, plus a cast iron grate that does not glow and stay hot like an electric coil. Glad it worked out for you during that storm, though, four days without power in Buffalo sounds rough.
