Cold brew is just watered down coffee and I'll die on this hill
I always thought cold brew was just a fancy way to sell old coffee. Then my friend in Portland made me try some from a place called Coava. They steep it for 18 hours. It was actually smooth, not bitter at all. Changed my mind completely. Anyone else have a coffee thing they were totally wrong about?

The steep time is key, but it's not just about being less bitter. Cold water pulls different flavors out of the beans than hot water does. You get more of the natural sweetness and less of the acidic, sharp notes. That's why it tastes so different, not just weaker. Calling it watered down misses the whole science of the extraction.

Try making it at home with a cheap mason jar and a filter. The long steep time really does change the game.
