Watching a crew in Nashville fix a slab changed my whole finishing order

I was down in Nashville last month helping a buddy on a big warehouse pour, and these two old timers were running the mag with a wet sponge thing I'd never seen. They soaked a sponge, wrung it out, and used it to pull bleed water before the first pass, and it cut down their waiting time by like 20 minutes. I always thought you just float it and hope, but that trick made the surface way tighter and I've done it on my last 3 jobs. Has anyone else tried the sponge method on hot days, or do you just stick to the bull float and pray?
