chatting with a stranger made me ditch my air fryer cookbook
I was making frozen wings last Tuesday and had them come out rubbery for the third time. My neighbor saw me staring at the basket through the window and knocked to ask what was wrong. She told me to stop following the package times and just shake the basket every 5 minutes until the skin looks crackled. I tried it with a batch of 12 wings and they were perfect in 22 minutes flat. She also said to preheat for 3 minutes longer than the display shows, which fixed my soggy fries problem. Has anyone else gotten better results from talking to a real person than from a recipe book?
That bit about the neighbor telling you to stop following the package times is so real. I had the same thing happen with chicken thighs, the bag said 25 minutes at 400 and they always came out dry and sad. My brother in law grabbed the basket, said just go 380 and flip them halfway, and they were juicy for the first time ever. I've been writing my own little times on a sticky note on the fridge since then and it beats every cookbook I own.
