Took me 3 weekends to redo one gate latch, should've just called a pro

After watching a YouTube video I figured a new self-closing gate latch would take an afternoon, but the post was 2 inches off plumb and suddenly I'm on Saturday number three with a chisel and a level, has anyone else had a 'quick fix' spiral like this in Albuquerque?

Once I had to shim a whole doorframe because one hinge was off by a quarter inch, ended up buying three different sized chisels before I got it right. What finally saved me was just taking a step back, redrilling the latch plate instead of fighting the post, and calling it good enough. Sometimes you gotta accept it'll never be perfect and just walk away.
