My neighbor's comment about my sourdough starter made me change my mind

I was chatting with my neighbor, a retired guy who used to run a bakery in Portland, and he saw me feeding my starter. He said, "You know, you're wasting a lot of flour... a tablespoon is plenty for a home baker." I always thought you needed a big, hungry starter. I've been using a cup of flour every other day for years. His point about waste really hit different. Anyone else cut back on their starter size and still get good results?

Wait a cup of flour every other day? That's wild! I keep mine in a tiny jar in the fridge and feed it maybe a spoonful of flour once a week. It always bounces right back for baking day.
