That one customer who told me my sourdough was 'too dense' actually changed everything
She said my crumb was like a brick and I was mad for a week but then I realized she was right about my starter being too young. Anyone else have a customer critique that made you rethink your whole process? What did you change?

Oh man, I've been there. Had a lady tell me my bagels tasted like "sad bread shaped into circles" and I wanted to cry. But she was dead right about my boil time being off. Now I keep a notebook of every mean thing customers say because 70% of the time they're accidentally giving me gold. For your sourdough, try bumping your bulk ferment up by 2 hours and see if that opens up the crumb. Sometimes the harshest feedback is just someone being honest when everyone else is being nice.

Same thing happens with my mechanic's reviews - people complain loudest about the one thing that's actually broken.
