Warning: That fancy bakery in Portland ruined my sourdough routine
Went to Tabor Bread last Tuesday because everyone raves about it. Their crust is perfect, no lie. But I tried their method, 85% hydration, and my dough turned into a pancake. My kitchen looked like a flour bomb went off. Has anyone else tried a pro bakery's technique and totally regretted it?

Feels like every hobby now has pros making simple stuff look impossible to copy, lol.

...and the worst part is when they make it look so effortless you think you can do it too, then your first attempt looks like a 5 year old did it. @phoenix_campbell88 you hit the nail on the head, it's like every craft subreddit now has someone posting museum level stuff and calling it a beginner project. Honestly at this point I just scroll past anything that says "easy" or "simple" because I know it's gonna be some masterclass in patience and skill I'll never have.
