I was measuring flour wrong for ages and my cookies were always flat...
My friend watched me scoop flour straight from the bag with the measuring cup and said, 'That's why your stuff is heavy.' I didn't know you were supposed to spoon it in and level it off. Tried it yesterday with my chocolate chip recipe and they actually held their shape. Has anyone else had a basic technique they were totally messing up?

Scoop flour straight from the bag" is how everyone does it. I've been baking for years and never heard of this spooning rule. My whole life is a lie.

I saw a baking blog years ago that explained the science behind it. Scooping packs the flour down, so you end up with more than the recipe needs. That's why spooning and leveling gives a more accurate cup. It really does make a difference in things like cakes and cookies. I felt the same way when I first learned about it.
