Appreciation post: The foil boat method completely saved my pork butt

I had a 9 pound butt that just would not push past 180 degrees, even after 14 hours on my offset. I wrapped it in a single sheet of foil, crimped like a boat, and it hit 203 in under an hour while the bark stayed solid. Has anyone else tried this instead of a full wrap?

Yeah one sheet is all you need for a boat, trust me on this. I've done this exact thing maybe a dozen times with pork butts that stall out hard around 175-180. Your experience sounds right on the money - once you get that foil boat on there it just powers through the stall without killing the bark like a full wrap would. I'd say make sure you crimp those edges really tight though, like fold them over twice so the rendered fat doesn't leak and make a mess in your smoker. The whole point is to let the top dry out while the bottom steams, and one layer does that better than two. Your mileage may vary but I've had way more consistent results with a single sheet than doubling up.
