Did my first overnight brisket on a 20 year old offset and it came out better than my last 5 with the pellet
Fired up the old Oklahoma Joe I got for $150 off a guy in Tulsa and figured I would just babysit it all night with lump charcoal and hickory splits. Woke up at 4am expecting a dry hockey puck but the flat probed at 203 and jiggled like gelatin. My buddy who judges local comps said the bark was the best he had off my setup, which stung a little since I have been bragging on the pellet grill for two seasons. Now I am wondering if I should just sell the pellet and run sticks full time, or keep both for the easy cooks. Anyone here made the full switch back to an offset and regretted it?
Bruh one good cook on a new toy doesnt mean you gotta dump the pellet. Every stick burner guy gets that one magic brisket and suddenly its "sell everything." I have seen dudes flip flop on this every single summer. The offset gave you a great result because you were up all night watching it like a hawk, not because the pellet is secretly trash. Do a few more overnighters with zero sleep and see how you feel about it at 3am when its raining. Keep both, use the pellet when you got stuff to do and the stick burner when you want to play pitmaster.
