Heard a guy at the Lockhart meat market say salt and pepper is all you need, and I almost argued with him
Stopped by a meat market in Lockhart two Saturdays back for a couple racks of spares and caught an older guy telling a young kid behind the counter that salt and pepper was all anybody needed, that anything else was hiding bad meat. I grew up layering on paprika, garlic, brown sugar, the whole deal, so my first gut reaction was to jump in and correct him. But standing there waiting on my order, I started wondering if he was half right, at least about the meat itself, because a good rack doesn't really need saving. Now I'm second guessing my whole rub routine going into the next cook. Curious if anybody here has actually run a side by side, just salt and pepper versus a full rub, on the same smoker same day.
