Swore offset smokers were the only way until I tried a drum smoker at a comp in Tulsa
I spent 3 seasons fighting temp swings on my old offset before a guy named Ray let me run his 55 gallon drum for a brisket turn-in, and it held 275 for 9 hours on one basket of lump. The bark came out just as good and I didn't touch a vent once. Anyone else make the switch, or did I just get lucky with his setup?
