The day I stopped wrapping brisket in foil

I been doing brisket for about 10 years now, always wrapped it tight in foil when the bark set. Thought that was just how it was done. Then last summer I was helping out at a comp in Kansas City and this old timer grinned at me when I pulled out the roll. He just said try butcher paper next time and see what happens. I figured why not so I picked up some pink paper from a restaurant supply place. That next brisket came out with a bark that actually stayed crunchy instead of turning into wet mush. Felt like I wasted years doing it the hard way without even knowing. Has anyone else had that moment where you realize you were working against yourself the whole time?

The part about "working against yourself without even knowing" really hit home for me. I see this all the time in regular life too. People stick with a method because that's how they learned it and nobody ever tells them there's a better way. For example, my neighbor spent years using a push mower on a giant hill lot until someone mentioned a self propelled model. He was just assuming the struggle was normal. Same thing with grocery shopping. People buy the same brands out of habit without realizing the store brand stuff is often made in the same factory. It's like we all get stuck in these ruts because changing feels like admitting we were wrong before.

Is it bad that I still buy the same gas station coffee every morning even though I know the one across the street is better? Guess I'm just afraid of being wrong about my morning routine.
