Watched my uncle's brisket cook go from 8 hours of babysitting to 4 hours of naps after he switched offsets
My uncle Pete has been cooking on the same cheap offset smoker out of Wichita for close to a decade, and for years he would sit by that thing all day, feeding it a split every 20 minutes and never leaving the yard. About 6 months ago he picked up a used cabinet smoker with thicker steel, and the difference in how that cook runs is night and day. Same brisket, same rub, but now he loads it once, checks it maybe twice, and the temps barely move. He says it is mostly the steel holding heat instead of leaking it, and honestly watching his last cook I believe it. Has anyone else made that jump and found they kind of miss the hands on part of the day?
