My neighbor throws out veggie scraps every week and it drives me nuts

I see his trash can full of carrot tops, onion skins, celery ends. Every Tuesday. I started saving mine in a freezer bag. After a month, I had enough to make a huge pot of veggie stock. Cost me nothing but a little time. How do people not see that as free food? What's your best 'free' kitchen trick?

Try regrowing those scraps in water first.

Actually had good luck with green onion ends in a shot glass on the windowsill. The roots came back fast and they grew a few new inches in about a week. Just make sure you change the water every couple days so it doesn't get slimy. Did it with some romaine lettuce too, but that one took longer and the new leaves were a bit bitter.
