Overheard a guy at the grocery store call a bag of rice 'boring'

I was in line behind him at the store in Springfield, and he was talking to his friend about how he never buys rice because it's just a plain filler. I make a big pot of jasmine rice on Sunday for about $2, and it's the base for my whole week. I'll fry an egg on top, mix in some frozen veggies, or add a can of beans. It's cheap and you can change it up so it's not the same thing. What are your best ways to make a basic grain feel like a real meal without spending a lot?

That "base for the whole week" idea is smart. I'll cook a big batch and then stir in a spoonful of curry paste or salsa when I reheat it. A single jar lasts forever and changes the whole flavor for pennies.

Oh man, calling rice boring is a crime! Just a heads up, jasmine rice is actually a specific type of aromatic rice, not the plain long-grain kind. It has its own flavor, so it's a great place to start. My favorite cheap trick is to cook it in broth instead of water, then finish it with a big squeeze of lemon and some black pepper.

Broth instead of water is a total game changer.
