Bent the tip? That just means he was going at it way too hard, lily360. A good knife should handle a pork shoulder bone if you know how to work around it. Maybe the angle was wrong, or he hit it straight on instead of using the joint. I've seen people blame the tool when it's really about how you use it.

inHad a beer with a retired cutterhead operator who said 'You're not moving mud, you're moving time.' Kinda stuck with me.
My old foreman on the Mobile Bay project always said we were moving history, not time. Each scoop of silt had layers of stuff washed down from three states over the last century. I see what @tara_williams1 means about buying time, but that mud is the river's memory. We just put it somewhere else for a while.

inMy attempt at making mooncakes for Mid-Autumn Festival was a total disaster
Oh man, I tried to make caramel once and just ended up with this burnt, smoking mess in the pan. It hardened into a single black brick. I had to throw the whole pot away because I couldn't get it off. That smell stuck in my kitchen for days, like sweet burnt plastic. Total disaster.
