Heard a guy at the supply house say he's been using the same steel for 12 years without resharpening

Was picking up some new hooks yesterday and overheard this old timer bragging to the kid behind the counter. Said he just wipes his knife down after each use and hones it before every shift. Never once touched a stone. I've been sharpening my Wusthof every 2 weeks like clockwork and the blade is getting thin. Makes me wonder if I'm overdoing it. Anyone else go that long between sharpenings?

Man idk, I feel like there's something to that old timer's approach. I actually read somewhere that a lot of people sharpen way too often and end up wearing their blades down for no reason. @abbyc33 nailed it about the butter knife thing too. I've been messing around with just honing mine for the last few months and it's held up way better than when I was hitting the stones every week. Maybe it's just me but I bet that guy's got a pretty solid routine going.

Honed mine so much I'm basically using a butter knife now, so maybe he's on to something. Your mileage may vary, but I'm starting to think I've been way too aggressive with my stones.
