I finally figured out why my sausage casings kept splitting
Spent 3 hours last Saturday fighting with a batch of bratwurst before I realized I wasn't letting the casings soak long enough, like 45 minutes minimum instead of the quick rinse I was doing. Has anyone else had a dumb little mistake eat up their whole afternoon like that?

Oh man, @miles277 knows what's up. I was the same way with my summer sausage last month. I thought a quick rinse was fine, but then I had casings bursting like popcorn. Now I set a timer for 45 minutes and just stare at them soaking like I'm watching paint dry. Works way better than my old "hurry up and hope for the best" method.

Funny you mention that... I had the exact same problem with breakfast sausages until my neighbor watched me struggle and pointed out the same thing. Always thought a quick dunk under the faucet was good enough but turns out that's why they were blowing out every time. Now I set a timer and just walk away while they soak... makes a world of difference.
