Spent 3 hours trying to get a lamb leg bone clean because I forgot to chill the fat first

I must've gone through ten different knife angles before my mentor walked by and just said 'cold fat cuts cleaner' and that one tip saved me the whole afternoon, has anyone else had a simple trick that just clicked way later than it should have?

Heard this from a buddy who does competition BBQ. Told me it took him like two years of struggling to debone pork shoulders clean. His neighbor just casually mentioned letting the meat rest longer after smoking. Changed his whole process overnight. He was so mad it was that simple the whole time.

Man, that's brutal but so true. I read somewhere that most competition pit guys obsess over their rubs and temps but forget the basics like resting. It totally changes the texture and makes pulling out that blade bone way easier. @sarah198 your buddy's story is a perfect example of overthinking it. Sometimes the simple stuff is what actually matters.
