The market inspector who made me change my whole cutting setup
Had a guy from the health dept walk through my stall at the farmers market in Portland last Saturday. He watched me break down a pork shoulder and pointed out my board was too close to the display case, like 4 inches away. Said any juice splash could land on the meat people buy. I never even thought about that in 8 years of doing this. Now I keep a barrier between my cutting area and the product, and honestly it slowed me down at first but I feel way safer. Has anyone else had an inspector point out something you felt stupid for missing?
