Bought a $40 digital probe thermometer and it saved my pork belly

I was doing a big batch for a catering job, and my old dial thermometer was all over the place. The new one gave me an exact temp in seconds, so I pulled the pork at the perfect 203F instead of guessing. It stopped me from serving dry, tough meat. What's one kitchen tool you bought that actually made a big difference?
