Finally caved and tried a mandoline after years of thinking they were gimmicky
I always thought mandolines were just another gadget taking up drawer space, but after slicing 20 lbs of potatoes by hand for a catering gig last month I grabbed a $30 one from a restaurant supply store. That thing cut through everything in 10 minutes flat and the slices were actually uniform. Has anyone else had a tool they wrote off that ended up saving them time?

My buddy Mike finally broke down and bought one last fall after he spent 4 hours dicing apples for his wife's pie fundraiser. He sliced his fingertip off on the second pass because he wasn't using the guard, had to go to urgent care and everything. Now he swears by it but he also uses the cut glove every single time, won't even touch it without that thing on. He told me the learning curve is mostly about respecting how sharp that blade actually is, once you get past that it's pretty simple. Did you ever nick yourself with yours or were you smarter than my friend?

Oh man, that's a solid win. Did you have to adjust your slicing technique a lot coming from using a knife, or did it feel pretty natural right away? I'm curious if the learning curve is worth it for someone who's stubborn like me.
