Shoutout to whoever figured out mise en place for home cooks

My girlfriend watched me prep a weeknight stir fry last Thursday and said why do you have all these little bowls out, it takes longer. I showed her that 12 minutes of chopping upfront cut my actual cooking time from 25 to 8 because nothing burned while I was hunting for the ginger. Has anyone else converted a slow home cook to the bowl system, or do they just think we're extra?

The "little bowls" comment hit home for me, because my wife said the exact same thing the first few times. I finally got her to try it with just three bowls for a curry, and she admitted the cleanup was worth it when nothing got scorched. She still won't do it for every meal, but she's a believer on the busy nights now.
