Warning: I thought the $12 thermometer probe was a gimmick until a 2 star review made me try it
I ran the same sear on two ribeyes last Tuesday at my spot in Boise, one with my old dial thermometer and one with the cheap digital probe a line cook kept pushing on me. The dial read 130 and the probe read 118 in the same spot, so I pulled the probe steak 12 degrees earlier and it came out perfect while the other one kept cooking past medium. How do you guys handle probe placement in a thin cut without poking it five times and letting all the juice out?
