DAE think the hand-pulled noodles at hole-in-the-wall spots beat the fancy places in Xi'an?
I hit up Muslim Quarter in Xi'an two weeks ago and paid 15 yuan for a bowl of hand-pulled noodles that blew away a 120 yuan bowl I had at a fancy restaurant near the Bell Tower. The cheap spot had one guy pulling dough by hand right in front of me, and the texture was chewy in a way the fancy place just could not match with their machine rollers. Everyone keeps saying you need to go upscale for real Chinese food, but I think that is backwards for noodles. Where do you all draw the line between cheap and fancy when it comes to getting the best bowl?
