Bought a $6 rotisserie chicken and turned it into 3 days of food, did I do this right?
Grabbed one of those $6 Costco birds on Sunday and stretched it into chicken salad, then soup, then tacos. Felt a little like a cooking genius for once. What do you all do with the carcass, am I supposed to make stock or is that overkill?
Isn't it funny how we'll happily spend 3 hours making stock from scratch but won't spend 10 minutes meal planning for the week? I've noticed the same thing with leftovers in general, people either treat them like a fun challenge or let them rot in the fridge while ordering takeout. For the carcass, just toss it in a pot with an onion, some carrots, and water for an hour or two, strain it, and freeze it in ice cube trays. It's not overkill, it's basically free soup base for the next time you're too tired to cook.
