Three years in and I still insist on a fixed bid over cost plus

Back in 2021 I hired a custom builder in Boise for a 2,400 square foot place and every single friend told me cost plus was smarter, but I pushed for a fixed bid anyway. Last month the lumber prices spiked and the builder had to eat an extra $14,000 on his end, which he did grumble about but never passed to me. Do any of you actually get better quality from cost plus, or is it just a way for the builder to shield himself from his own poor estimates?
