Local apple glut inspired my best cider fermentation yet

An orchard down the road had so many apples they were giving them away. I set up a fermentation station with glass jars and airlocks in a cool room. To manage temperature, I wrapped the jars in towels and placed them near a north-facing window, keeping it around 65 degrees Fahrenheit. After four weeks, the cider had a perfect balance of sweetness and acidity.

That towel trick is clever for buffering temperature swings. You could take it further with a water bath setup using an aquarium heater for even more precise control.

I used to dismiss low-tech methods for temperature regulation in brewing. Your results with the towel wrap show how effective passive insulation can be. Now I’m reconsidering my own setup for future batches.
