Having a local show me where to get the best pho made me see street food in a new light.

How else would you find those back-alley stalls the locals actually use? Just make sure your guide actually eats there too, not just points at places.

Even guides who eat there can get paid to bring people.

Wait, that's not how it usually works. A real guide just shares their favorite spot, no payment needed. Good point by Oscar though about actually eating there too.
