Why does nobody talk about how you can mess up a simple bao dough?

I was trying to make char siu bao at home for a year, and the dough always came out dense. Last week, I watched a street vendor in Guangzhou on a food show. He said the water for the yeast has to be exactly 105 degrees, not just warm. I had been guessing with my finger the whole time. My first batch after using a thermometer was a total game changer. Has anyone else had a kitchen fail that turned out to be one tiny step?

My whole drawing set almost got wiped because I didn't check the cloud sync

Honestly, I was finishing a big set of electrical schematics for a shop in Akron last Tuesday, about 50 sheets. I saved everything, closed the program, and went home. Next morning, I opened the file and only 3 sheets were there. The cloud backup had failed without any error message. I had to dig into the local temp files and found a hidden auto-save folder with a version from 4 hours before I closed. I lost some notes but saved the core work. Has anyone else had a cloud service just silently fail like that? What's your backup plan now?

I put a whole orange in my sourdough starter and my kitchen smelled like a brewery

I saw a video from a baker in Seattle who swore that adding a whole, unpeeled organic orange to your starter gave it a complex flavor. So I shoved one into my week old starter, fed it like normal, and left it overnight. Woke up to a bubbling mess that smelled like strong beer and the orange skin had turned a weird gray color. I baked a loaf anyway and it tasted like someone mixed cheap wine with my good bread. Learned that some tips are just plain weird, not clever. Has anyone else tried a fruit addition that actually worked without ruining everything?

Can we talk about the idea that all overdraft fees are just a scam?

I keep seeing posts that treat any bank charging an overdraft fee as predatory, but that's not the full picture. My credit union in Grand Rapids gives a full 24-hour grace period to cover the shortfall before the fee hits, which is a fair warning system. Has anyone else found that their bank's specific policy actually makes sense?
