Totally, that wet sponge line is such a perfect clue. @jadel65 is right, I got a similar comment once and it totally pointed to my proofing time being off.

Could that customer have been trying to describe a gummy crumb? Sometimes people don't have the right words. A wet sponge means it's dense and chewy, which is a real texture problem in sourdough from under-fermentation or bad shaping. They gave you a perfect clue, even if it sounded rude.

Wait, what if that customer just has no taste? Some people are so used to soft, processed bread that real sourdough texture feels wrong to them. Maybe your process was fine and they just don't get it. Taking one random insult as gospel could mess up a good thing.

Yeah but "no taste" feels like a cop out. Jade's point about the gummy crumb clue is actually super useful to check.
