A judge at the county fair in Kalispell docked my sourdough 4 points for a "gummy crumb" and I still think about it
That one comment made me toss my starter and rebuild it from scratch over 6 months, and now I can't tell if my bread actually got better or if I just got paranoid, so how do you all deal with judges who only say one vague thing and leave?
Four points for a gummy crumb is such a specific little knife to the gut, and honestly a judge owes you more than three words when they ding you like that. I'd push back on the idea that the fix was on you at all. A gummy crumb can come from so many things, underproofing, baking too cool, slicing too soon, a starter that's just slow that week, and a single comment with no follow up doesn't tell you which one it was. Six months of rebuilding might have made great bread, but you have no way to know if it fixed the actual problem because nobody ever told you what the problem was. Next time, corner that judge after the table clears and ask them to describe what they felt in the crumb, not just label it.
