My grandma said to never open the oven door while baking bread. I didn't listen.

She told me this for years, saying it would make the bread fall. Last week, I was baking a sourdough loaf and peeked at the 20 minute mark because I was nervous. The loaf IMMEDIATELY deflated in the middle. It came out dense and sad. I followed her advice on my next attempt and left it alone for the full 45 minute bake, and it was perfect. Has anyone else had a baking rule from a family member that turned out to be totally true?

Saw a chef say the same thing on TV once.

Oh wow, @jaden69, that's a good point. I actually used to think the opposite was true, you know? But hearing it from a pro chef like that really made it click for me. It's one of those things you just don't question until someone shows you the right way. Makes you wonder what else we're all doing wrong.

Was it that thing about salting pasta water? I read somewhere it actually makes the sauce stick better, not just add flavor. Kinda blew my mind too.
