That pop-up bakery in Austin made me rethink my sourdough starter

I visited a tiny bakery in Austin last weekend and watched the owner pull 8 perfect loaves out of a single oven at once. She told me she's been using the same starter for 14 years and never refrigerates it. Has anyone else tried keeping their starter out on the counter instead of the fridge?
