I finally chose between a stick burner and a pellet smoker last spring
I was trying to decide between a used Oklahoma Joe offset and a new Traeger for about 3 months. Ended up going with the offset for $350 from a guy near Kansas City because I wanted that hands on feel. First brisket took 14 hours and I had to babysit it the whole time, but the smoke ring was better than anything I ever got from a pellet grill. Anyone else regret picking one over the other for a specific cook?

Man that 14 hour babysit brings back memories. I did a brisket on my offset once and my wife called it "daddy daycare" because I basically sat in a lawn chair next to it for an entire Saturday drinking cheap beer and adjusting vents every 20 minutes. Meanwhile my buddy with a pellet smoker was taking a nap on his couch while his brisket cooked itself. I got a killer bark though and he got pulled pork that tasted like it was made in a toaster oven. No regrets but my back sure does.

That 14 hour lawn chair gig sounds rough but honestly those are the best cooks. I respect anyone who puts in that kind of work for a proper brisket. Did the bark at least live up to the back pain you earned?
