Just had to pick between an offset and a pellet smoker for my competition cookoff

I was down to the wire for a local competition in Austin and had to choose between my old offset and a newer pellet smoker. I went with the pellet because I thought it'd be more consistent overnight. Big mistake - the temperature swings were wild and I ended up with dry brisket. Has anyone else switched away from a traditional offset and regretted it?

Learned that lesson myself, felt like I was babysitting a toddler with that pellet grill.

Wait, you actually had to babysit a PELLET GRILL? I thought those things were supposed to be the easy button for smoking, just set it and forget it. @the_wesley what kind of garbage model did you have? My buddy got one last summer and it dumped a hopper of pellets on his deck in the middle of the night. Talk about a real wake up call. That toddler comparison is too accurate, I would have thrown mine in the pool after that.
