Used to sauce my ribs early, now I wait till the end

I thought glazing them early added flavor. Tasting the bark without sauce first made me switch.

Yeah, it's like rushing stuff usually messes it up, which @john161 found out the hard way. Good ribs, like most things, need the right timing.

Ever think the sugar in the sauce burns if you put it on too soon? It can give the bark a bitter taste instead of that sweet crust. That's why waiting lets the smoke do its thing first.

Made that error last weekend with some ribs. The bark was so bitter my dog wouldn't even eat it. Now I'm religious about waiting, even if my stomach complains.
