Ever think the sugar in the sauce burns if you put it on too soon? It can give the bark a bitter taste instead of that sweet crust. That's why waiting lets the smoke do its thing first.

On the Miller building site, our foreman took daily photos of EVERY progress point. It was a lifesaver when the inspector asked about a moved pipe. We just pulled up the folder from that week and showed him EXACTLY when it happened. That kind of proof stops arguments before they even start. Honestly, it builds so much trust with the whole team. More foremen should see it as essential, not extra work.

The fancy packaging thing got me thinking too... I switched to the store brand cereal and it's literally the same flakes in a different bag. Saved a bunch and didn't notice a difference.
