I always thought you had to heat a big flange joint to get it to seal right

I was on a job in Toledo last month and the foreman told me to try a cold set with a new gasket compound, which I thought was nuts. It held a 250 psi test with no leaks at all, which completely surprised me. What other old school rules have you guys found aren't always true?
